What is the DNA position is it extracted at for your Omega 3?
We do not quantify the specific location (sn-positioning) of Omega-3 on the final rTG product.
However, below is a theoretical estimate.
Using 400 mg/g EPA and 300 mg/g DHA EE oil as the starting material, enzymatic processing with Immobilized Food Grade Lipase could yield the following:
sn-2 DHA Probability:
-
High-Purity Process (90% TG - our oil) would have approx: 0.96% of total DHA in the sn-2 position.
Why Higher TG content increases sn-2 DHA
- Standard Processed oil (60% TG content) would have approx: 0.64% of total DHA in the sn-2 position.
- At 90% TG, the 50% increase in TG molecules creates more sn-2 sites, outweighing DG loss.
- DHA occupancy per sn-2 site still remains low (0.96%) due to enzymatic/steric constraints.
