In what DNA position is our Omega 3 extracted at?
While we don’t have the exact details on the specific location (sn-positioning) of Omega-3 in the final rTG product, we’re happy to provide you with a theoretical estimate.
Starting with 400 mg/g EPA and 300 mg/g DHA EE oil, our enzymatic processing with Immobilized Food Grade Lipase can yield some interesting results.
For the sn-2 DHA Probability, in our High-Purity Process (with 90% TG content), you can expect approximately 0.96% of the total DHA to be in the sn-2 position.
You may wonder why a higher TG content leads to an increase in sn-2 DHA. Well, in a Standard Processed oil (with 60% TG content), the estimate is around 0.64% of total DHA in the sn-2 position. The increase to 90% TG creates more sn-2 sites, which helps balance out the loss of DG. However, it’s important to note that the DHA occupancy per sn-2 site stays relatively low (0.96%) due to some enzymatic and steric limitations.
We hope this helps clarify things for you!
